At most BBQ gatherings, salads are just a side. They’re there because they have to be. But honestly — good salads can steal the show.

The key is simple: texture, freshness and ingredients that can handle the heat of the day. No wilted leaves and no boring combinations.

Salads that are not just "decoration" on the side of the plate
Chickpea with feta (a salad that holds up)
  • 1 can of chickpeas
  • 100 g feta
  • 1 tomato
  • olive oil
  • lemon juice
  • salt and pepper
Rinse the chickpeas, add chopped feta and tomato. Drizzle with oil and lemon, mix.
This salad does not wilt — it can sit on the table without a problem.
Couscous with vegetables
  • 150 g couscous
  • bell pepper
  • cucumber
  • olive oil
  • lemon juice
  • parsley
Pour hot water over couscous, cover and let it sit for 5 minutes. Fluff it up, add chopped vegetables and season.
Light, fresh and perfect for hot days.
Tzatziki (cold contrast)
  • 1 yogurt
  • 1 cucumber
  • 1 garlic clove
  • olive oil
  • salt
Grate the cucumber, squeeze out the water and mix with the rest of the ingredients.
Always squeeze the cucumber — otherwise you get soup.
Walnut pesto (something different)
  • a handful of walnuts
  • olive oil
  • 1 tbsp parmesan
  • garlic
  • lemon juice
  • salt
Blend everything into a thick sauce.
Great on meat, vegetables or bread.
Side: baby potatoes in foil

• wash the potatoes and cut them in half
• add butter, salt and fresh herbs to each half
• wrap each half in its own piece of foil
• grill on the edge for 20–30 minutes
No dishes, no complications — just wrap and forget.
