Seven quick fall dinners with pumpkin for cool, cozy days. This collection moves from creamy pasta and a colorful skillet to a warm salad, hearty stew, silky soup, pork cutlets and crisp quesadillas. Choose any recipe that suits your appetite and let pumpkin bring its gentle sweetness and autumn color to the table.

7 Quick Fall Dinners with Pumpkin: Easy and Cozy Recipes
7 pumpkin dinners · about 15–45 minutes · serves 2

Every recipe makes two servings and is written in clear, practical steps. The collection includes vegetarian choices as well as chicken, sausage and pork, so pumpkin never tastes repetitive.

The cooking times are estimates and include basic ingredient preparation. The quesadillas take about 15 minutes when the pumpkin purée is already prepared, while the sausage stew may need up to 45 minutes depending on the sausage. If you are new to cooking, allow a little extra time.

Which pumpkin should you use?

Hokkaido squash and butternut squash work especially well in these recipes. Hokkaido has a thin, edible skin, so it usually only needs washing, halving and deseeding. Peel butternut squash before removing the seeds and cutting it. Whenever a recipe lists “cleaned pumpkin,” the weight refers to the usable flesh without seeds—and without the skin when using butternut.

Before you start

  • Cut pumpkin evenly. Small, similarly sized pieces cook at the same rate and keep the stated cooking times realistic.
  • Watch the moisture. Pumpkin can vary in water content. Add liquid gradually to sauces and allow watery mixtures to reduce uncovered.
  • Season at the end as well. Cheese, sausage and stock may already be salty, so taste before adding the final salt.
  • Handle raw meat separately. Wash your hands, knife and chopping board after preparing chicken or pork.

Creamy Pumpkin Pasta with Crispy Sage

A creamy pasta dish with the gentle sweetness of pumpkin and the deep aroma of crisp sage. It feels rich and comforting without requiring a complicated sauce.

Creamy Pumpkin Pasta with Crispy Sage
Total time: about 25–30 minutesYield: 2 servingsDifficulty: 2/5

Ingredients

  • 200 g pasta, such as penne, fusilli or tagliatelle
  • 300 g cleaned pumpkin, Hokkaido or butternut, cut into small cubes
  • 1 small onion
  • 2 garlic cloves
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 100 ml cooking cream or sour cream
  • 6–8 fresh sage leaves
  • 1 pinch ground nutmeg
  • salt to taste
  • black pepper to taste
  • 2 tablespoons grated Parmesan or pumpkin seeds, to finish

Method

  1. Prepare the water and pumpkin. Fill a large pot with water, add about 1 teaspoon salt and bring to a boil. Meanwhile, clean the pumpkin and cut it into small, evenly sized cubes. Finely chop the onion and garlic.
  2. Sauté the vegetables. Heat the olive oil in a large frying pan over medium heat. Add the onion and cook for 3–4 minutes until soft and translucent. Add the garlic and pumpkin and cook for another 2 minutes, stirring so the garlic does not brown.
  3. Soften the pumpkin. Add about 150 ml water, cover and cook over medium heat for 10–12 minutes. The pumpkin is ready when a fork slides through it easily. Add a little more water if the pan becomes dry too soon.
  4. Cook the pasta. Add the pasta to the boiling water and cook according to the package directions, usually 8–10 minutes. Reserve a few tablespoons of the starchy cooking water before draining.
  5. Make the sauce. Mash the soft pumpkin in the pan with a fork or potato masher. For a completely smooth sauce, use an immersion blender. Stir in the cream, nutmeg, salt and black pepper and reduce the heat. If using sour cream, add it over low heat and do not boil the sauce vigorously.
  6. Crisp the sage. Melt the butter in a small frying pan. Add dry, patted sage leaves and cook over medium heat for 1–2 minutes until crisp. Remove from the heat immediately so they do not burn.
  7. Combine. Add the drained pasta to the pumpkin sauce and toss well. If the sauce is too thick, gradually add about 3 tablespoons reserved pasta water.
  8. Serve. Divide between plates, add Parmesan or pumpkin seeds and spoon over the sage butter and crispy leaves.

Chicken and Pumpkin Skillet

Tender chicken strips, small pumpkin cubes and aromatic herbs come together in one pan for a colorful, straightforward dinner.

Chicken and Pumpkin Skillet
Total time: about 25–30 minutesYield: 2 servingsDifficulty: 2/5

Ingredients

  • 300 g chicken breast
  • 300 g cleaned pumpkin, cut into roughly 1 cm cubes
  • 1 garlic clove
  • 2 tablespoons olive oil
  • ½ teaspoon dried marjoram
  • 1 pinch ground nutmeg
  • salt to taste
  • black pepper to taste
  • 120 g couscous or rice, to serve

Method

  1. Prepare the chicken. Cut the chicken breast into evenly sized strips or cubes and season with salt and black pepper. Cut the pumpkin into cubes and finely chop the garlic. Wash your hands, knife and chopping board after handling raw chicken.
  2. Prepare the side dish. For couscous, place it in a bowl, season lightly with salt, pour over 150 ml boiling water and cover with a plate. Leave for about 5 minutes or follow the package directions. If using rice, cook it separately according to the package; this may increase the total cooking time.
  3. Brown the chicken. Heat 1 tablespoon olive oil in a large frying pan over medium-high to high heat. Add the chicken and cook for about 7–8 minutes until colored on all sides. Transfer to a clean plate. The chicken must be fully cooked by the end of the recipe.
  4. Cook the pumpkin. Add the remaining tablespoon olive oil and the pumpkin cubes to the same pan. Cook over medium heat for 7–9 minutes, stirring several times. If the pumpkin is browning too quickly while still firm, add 1–2 tablespoons water and cover briefly.
  5. Add the seasonings. Stir in the garlic, marjoram and nutmeg and cook for about 1 minute until fragrant.
  6. Finish the dish. Return the chicken and its juices to the pan. Stir and cook for another 2 minutes, or until the chicken is fully cooked and the pumpkin is tender. Season with more salt and black pepper if needed.
  7. Serve. Fluff the couscous with a fork, divide between plates and add the chicken and pumpkin. Serve the same way with cooked rice if preferred.

Roasted Pumpkin, Chickpea and Feta Salad

A warm-and-cool salad with sweet pumpkin, salty feta, chickpeas and crunchy pumpkin seeds. It works as a light yet satisfying dinner.

Roasted Pumpkin, Chickpea and Feta Salad
Total time: about 30 minutesYield: 2 servingsDifficulty: 1/5

Ingredients

  • 350 g pumpkin, cut into roughly 2 cm cubes
  • 1 can chickpeas, about 240 g drained weight
  • 100 g baby spinach, lamb's lettuce or mixed baby leaves
  • 80 g feta
  • 2 tablespoons olive oil, for roasting
  • 2 tablespoons toasted pumpkin seeds
  • 1 pinch salad seasoning
  • For the dressing: 1 tablespoon pumpkin seed oil, 1 tablespoon apple cider vinegar or lemon juice, 1 teaspoon honey or mustard, salt and black pepper to taste

Method

  1. Heat the oven. Preheat the oven to 200 °C and line a baking tray with parchment paper. You can also use an air fryer; adjust the cooking time to your appliance.
  2. Prepare the pumpkin and chickpeas. Drain and rinse the chickpeas and dry them well with paper towel. Cut the pumpkin into roughly 2 cm cubes. Place both in a bowl, add the olive oil, a little salt, black pepper and the salad seasoning, then toss.
  3. Roast. Spread the pumpkin and chickpeas in a single layer on the tray. Roast for about 18–20 minutes, or until the pumpkin is tender and the chickpeas are lightly browned. Larger cubes may need a few extra minutes.
  4. Mix the dressing. Whisk the pumpkin seed oil, vinegar or lemon juice, honey or mustard, salt and black pepper together in a small cup.
  5. Build the salad base. Wash and thoroughly drain the leaves, then divide them between two deep plates. Add the warm pumpkin and chickpeas.
  6. Add feta and seeds. Crumble over the feta and sprinkle with the toasted pumpkin seeds.
  7. Finish. Spoon over the dressing immediately before serving.

Hearty Pumpkin Stew with Beans and Sausage

A warming bowl with pumpkin, red beans and sausage. Mashed beans thicken the stew naturally, so no flour is needed.

Hearty Pumpkin Stew with Beans and Sausage
Total time: about 35–45 minutes, depending on the sausageYield: 2 servingsDifficulty: 2/5

Ingredients

  • 300 g pumpkin, cut into cubes
  • 1 Carniolan sausage or fresh pork sausage, or 100 g bacon or lean ham
  • 1 can cooked red kidney beans
  • 1 large carrot
  • 1 small onion
  • 2 garlic cloves
  • 1 tablespoon oil or lard
  • 1 teaspoon sweet or smoked paprika
  • ½ teaspoon dried lovage
  • ½ teaspoon dried marjoram
  • 450 ml vegetable or meat stock
  • salt to taste
  • black pepper to taste

Method

  1. Prepare the ingredients. Finely chop the onion and garlic, slice the carrot into thin rounds and cut the pumpkin into cubes. Slice the sausage into rounds about 5 mm thick. If using raw sausage, check the producer's directions and cook it completely; brief browning alone is not enough.
  2. Brown the sausage. Heat the oil or lard in a pot. Add the sausage and cook for 3–4 minutes until lightly browned, then transfer to a plate. Raw sausage must be thoroughly cooked before serving and may require longer simmering later.
  3. Sauté the vegetables. Add the onion and carrot to the same pot and cook over medium heat for about 4 minutes. Add the garlic and paprika and stir for about 30 seconds. Do not let the paprika burn.
  4. Cook the base. Add the pumpkin, marjoram and lovage, then pour in 450 ml stock. Cover and bring to a boil. Reduce the heat and simmer gently for 12–15 minutes, until the carrot and pumpkin are tender.
  5. Add the beans. Add about two-thirds of the beans with their liquid and return the sausage to the pot. Mash the remaining beans in a cup with a few tablespoons liquid from the pot, then stir this purée into the stew to thicken it.
  6. Finish cooking. Simmer for at least another 5 minutes so the flavors combine. If using raw sausage, continue until it is fully and safely cooked. Taste before adding salt because sausage can already be quite salty.
  7. Serve. Ladle into deep bowls and add fresh bread if desired.

Creamy Pumpkin Soup with Crispy Croutons

A silky pumpkin classic that comes together quickly and gets a satisfying finish from homemade croutons, sour cream and pumpkin seed oil.

Creamy Pumpkin Soup with Crispy Croutons
Total time: about 25–30 minutesYield: 2 servingsDifficulty: 1/5

Ingredients

  • 400 g cleaned pumpkin, Hokkaido or butternut, cut into cubes
  • 1 small potato
  • 1 small onion
  • 1 garlic clove
  • 1 tablespoon butter or olive oil
  • 500 ml water or vegetable stock
  • 1 pinch ground nutmeg
  • salt and black pepper to taste
  • To serve: 2 slices sandwich bread, 1 tablespoon pumpkin seed oil, 1 tablespoon sour cream, parsley and pumpkin seeds

Method

  1. Prepare the vegetables. Finely chop the onion and garlic. Peel the potato and cut it and the pumpkin into small, similarly sized cubes.
  2. Sauté. Heat the butter or olive oil in a pot over medium heat. Add the onion and cook for about 3 minutes until soft. Add the garlic, pumpkin and potato and cook for another 2–3 minutes, stirring occasionally.
  3. Cook the vegetables. Pour in 500 ml water or stock and season lightly with salt. Cover and bring to a boil, then simmer over medium-low heat for about 15 minutes, until the potato and pumpkin are completely tender.
  4. Make the croutons. While the soup cooks, cut the bread into small cubes. Toast them in a frying pan over medium heat for about 4–5 minutes, stirring, until golden and crisp. Add a drop of oil, dried garlic or herbs if desired.
  5. Blend the soup. Remove the pot from the heat. Carefully blend the soft vegetables and liquid with an immersion blender until smooth. Keep the blender head below the surface while running to prevent hot splashes.
  6. Season. Add the nutmeg, taste and adjust the salt and black pepper. If the soup is too thick, stir in a few tablespoons hot water.
  7. Serve. Ladle into bowls, add the croutons and sour cream, then drizzle with pumpkin seed oil and finish with seeds and parsley.

Pork Cutlets in Thick Pumpkin Sauce

Juicy pork cutlets in a velvety pumpkin sauce that pairs especially well with tagliatelle or creamy mashed potatoes.

Pork Cutlets in Thick Pumpkin Sauce
Total time: about 30–35 minutes, excluding the side dishYield: 2 servingsDifficulty: 2/5

Ingredients

  • 350 g pork cutlets, such as pork loin or tenderloin
  • 250 g cleaned pumpkin, cut into cubes
  • 1 small onion
  • 1 garlic clove
  • 2 tablespoons oil, for cooking
  • 50 ml white wine, optional, or vegetable stock
  • 100 ml cooking cream
  • 1 pinch dried thyme or marjoram
  • salt to taste
  • black pepper to taste
  • tagliatelle or mashed potatoes, to serve

Method

  1. Prepare the pork. If needed, gently pound the cutlets to an even thickness and season both sides with salt and black pepper. Chop the onion and garlic and cut the pumpkin into small cubes.
  2. Brown the cutlets. Heat 1 tablespoon oil in a frying pan over medium-high heat. Cook the cutlets for about 3–4 minutes on each side until browned, adjusting the time to their thickness. Transfer to a plate and cover loosely; they will finish in the sauce.
  3. Build the vegetable base. Add the remaining tablespoon oil and the onion to the same pan. Cook for about 3 minutes, then add the pumpkin and garlic and cook for another 2 minutes.
  4. Soften the pumpkin. Pour in 50 ml white wine or stock and scrape the flavorful browned bits from the bottom. Cover and cook over medium heat for about 10 minutes, until the pumpkin is tender. If the liquid evaporates too soon, add a little water.
  5. Make the sauce. Mash the soft pumpkin with a fork. For a completely smooth sauce, carefully transfer the contents to a tall container, blend with an immersion blender and return to the pan.
  6. Finish the pork. Stir in the cream, thyme or marjoram, salt and black pepper. Return the cutlets and any juices to the pan. Simmer gently over low heat for another 3–4 minutes, or until the pork is fully cooked. Thicker pieces will need longer.
  7. Serve. Serve with cooked tagliatelle or creamy mashed potatoes.

  2. Season the filling. Mix the pumpkin purée with a little salt, black pepper and the sweet paprika or cumin.

Frequently asked questions

Do I need to peel Hokkaido squash?

No. Its skin is edible and softens during cooking or roasting. Wash it thoroughly and remove the seeds. Peel butternut squash for these recipes.

Can I cut the pumpkin in advance?

Yes. Store cleaned, cut pumpkin in a sealed container in the refrigerator and generally use it within 2–3 days. This can significantly shorten dinner preparation.

Can I use frozen pumpkin?

Yes, especially in soups, stews and sauces. Frozen pumpkin releases more water, so cook it uncovered for a little longer if necessary. Fresh pumpkin usually gives a better texture in the roasted salad.

Can I use prepared pumpkin purée?

Yes, as long as it is unsweetened pumpkin purée without added spices. Sweetened pumpkin pie filling is not suitable for these savory recipes.

Which recipes are easiest for beginners?

The creamy pumpkin soup and pumpkin quesadillas are especially straightforward. The quesadillas become even easier when the pumpkin purée is prepared in advance.

One pumpkin, seven different dinners

Pumpkin is not only for soup. It can become a creamy sauce, colorful skillet, warm salad, hearty stew or crisp quesadilla. Save this collection for the next cool day and choose the recipe that fits your appetite.
