Great grilling does not start with meat. It starts with flavor. And flavor comes from spices.
You do not need to overcomplicate things. If you understand a few basic combinations, you can turn an average cut into something people actually remember.
The base that always works
salt + pepper + garlic + oil
This is your foundation. Even if you have nothing else, you still get a solid result.
For chicken
paprika + garlic + lemon + thyme
Fresh, slightly acidic and perfect for the grill.
Add a bit of yogurt and you already have a top-tier marinade.
For pork
garlic + cumin + paprika + a bit of sugar
Pork loves a touch of sweetness and smoky flavor.
For beef
salt + pepper + rosemary
Keep it simple. Do not overpower good beef.
Add salt right before grilling, not earlier.
For vegetables
olive oil + salt + pepper + balsamic vinegar
Vegetables on the grill need a bit of acidity.
Dry rub (spice mix)
paprika + garlic powder + onion powder + salt + pepper
Mix everything and rub it into the meat.
Let it sit for at least 30 minutes before grilling.
