You can turn it into a creamy one-pan meal, crispy potato stacks, flavorful rice, cheesy baked toasts or little meat pies that look far more complicated than they really are.

This weekly menu brings together seven quick ground meat dinners that are not Bolognese sauce. Every recipe serves two, and each step is explained clearly enough for even a beginner to follow without guessing.
Before you start: you can use ground beef, a beef-and-pork mixture or ground turkey. Turkey is leaner, so add an extra teaspoon of oil while browning it if needed.

Ingredients for 2

  • 250 g ground meat
  • 140 g orzo pasta
  • 1 small onion
  • 2 garlic cloves
  • 450 ml hot stock or water
  • 80 ml cooking cream
  • 2 large handfuls baby spinach
  • 30 g grated Parmesan
  • 1 tbsp oil
  • 1/2 tsp sweet paprika
  • salt to taste
  • black pepper to taste

Method

  1. Prepare the ingredients. Peel and finely chop the onion. Peel and finely chop the garlic, or press it through a garlic press. Rinse and drain the spinach. Heat the stock or water.
  2. Heat the pan. Place a large deep skillet over medium-high heat. Add the oil and let it heat for about 30 seconds.
  3. Cook the onion. Add the chopped onion and cook for 3 to 4 minutes, stirring several times, until soft and translucent.
  4. Add the ground meat. Add the meat and break it into small pieces with a wooden spoon. Cook for about 6 minutes, until no longer pink and lightly browned.
  5. Add the garlic and seasoning. Stir in the garlic, sweet paprika, salt and black pepper. Cook for about 30 seconds.
  6. Add the orzo. Pour the dry pasta directly into the pan and toast it for about 1 minute while stirring.
  7. Add the liquid. Pour in the hot stock or water. Stir well and scrape up any browned bits from the bottom of the pan.
  8. Cook the orzo. Once the liquid begins to boil, reduce the heat. Cook for 10 to 12 minutes, stirring every 2 minutes. If the orzo is still firm and the liquid has nearly disappeared, add a few tablespoons of hot water.
  9. Add the cream and spinach. When the orzo is almost tender, pour in the cream and add the spinach. Stir for 1 to 2 minutes, until the spinach wilts.
  10. Finish with Parmesan. Remove the pan from the heat, stir in the grated Parmesan and let the dish rest for 2 minutes.
Tip: the dish should still look slightly loose when you remove it from the heat, because the orzo will continue absorbing the sauce as it rests.

Method

  1. Preheat the oven. Set the oven to 210°C conventional heat. Line a baking sheet with parchment paper and lightly brush it with 1 tablespoon of oil.
  2. Prepare the potatoes. Peel and coarsely grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  3. Mix the potato base. Put the squeezed potatoes in a bowl. Add the egg, cornstarch, salt and black pepper, then mix well.
  4. Shape the stacks. Place about 8 equal mounds on the baking sheet. Use a spoon to flatten each one into a round about 1 cm thick.
  5. Start baking. Lightly brush the tops with the remaining oil and bake for 18 to 20 minutes.
  6. Prepare the meat topping. Finely chop the onion and garlic. Cook the onion and ground meat in a skillet.
  7. Season the meat. Once it is no longer pink, add the garlic, oregano, paprika, salt and black pepper. Cook for 1 more minute.
  8. Flip the stacks. Remove the baking sheet from the oven and carefully flip each potato round with a wide spatula.
  9. Add the topping. Spoon some meat onto each potato round and sprinkle with mozzarella.
  10. Finish baking. Return the tray to the oven for 8 to 10 minutes, until the cheese melts and the potatoes are golden and crisp.
Tip: serve them with a green salad or a spoonful of yogurt mixed with lemon juice.

  2. Prepare the ingredients. Finely chop the onion. Chop 2 garlic cloves and reserve the third for the end. Drain the corn.
  3. Heat the pan. Use a large skillet with a lid. Add the oil and heat it over medium-high heat.
  4. Cook the meat and onion. Add the onion and ground meat and cook for about 7 minutes, breaking the meat into small pieces with a wooden spoon.
  5. Add the seasoning. Stir in the 2 chopped garlic cloves, paprika, thyme, salt and black pepper.
  6. Add the rice. Add the rinsed rice and toast it for about 1 minute while stirring.
  7. Add the liquid. Pour in the stock or water. Once it comes to a boil, reduce the heat.
  8. Cook the rice. Cover the skillet and cook for about 14 minutes. Avoid lifting the lid too often.
  9. Add the corn. Gently stir in the corn. If the rice is still firm, add a few tablespoons of hot water and cook for another 3 to 5 minutes.
  10. Add the garlic butter. Press the remaining garlic clove and mix it with the butter. Stir the mixture into the hot rice.
  11. Let it rest. Cover the pan and let the dish stand for 5 minutes. Fluff the rice with a fork before serving.

  5. Add the liquid. Pour the stock and cream into the skillet and stir well.
  6. Add the gnocchi. Add the gnocchi directly to the sauce.
  7. Cook the gnocchi. Cook for 5 to 7 minutes, stirring gently several times.
  8. Check the consistency. If the sauce is too thick, add a few tablespoons of hot water. If it is too thin, cook for another minute or two.

  2. Cook the potatoes. Boil for 15 to 18 minutes, or until easily pierced with a knife.
  3. Prepare the ingredients. Chop the onion and garlic, and slice the mushrooms.
  4. Brown the meat. Heat the oil in a skillet and cook the meat for about 6 minutes.
  5. Add the onion. Add the onion to the meat and cook for 3 minutes.
