Elevenses – Four New Snacks for This Week

Four quick mid-morning ideas: shrimp spring rolls, mini Caprese bites, mango smoothie, and chocolate coconut balls.

Sometimes 11 o’clock is that little magical pause when we simply need a bite, a sip, and a moment to disconnect from the pace of the day. That’s why I’ve prepared four new Elevenses ideas that bring together quick preparation, lightness, and of course, flavor.

This week you’ll find something exotic, something savory, something refreshing, and a little treat for those with a sweet tooth.

Exotic, light, and crisp – perfect for dipping into soy sauce.

  • 1 avocado
  • a handful of fresh sprouts
  • a few cilantro or mint leaves (optional)
  • soy sauce for dipping

Preparation

  1. Prep the ingredients: peel the shrimp; slice the avocado thinly; wash and dry sprouts and herbs.
  2. Rice papers: soak each sheet in warm water for 5–8 seconds until pliable. Place on a clean kitchen towel.
  3. Fill: in the center place 2 shrimp, avocado slices, some sprouts, and a herb leaf.
  4. Roll: fold the bottom over the filling, fold in the sides, then roll up tightly.
  5. Serve: fresh, with soy sauce on the side.
