Ingredients (for 2 servings)

  • 200 g pasta (spaghetti, macaroni, fusilli – whatever you have)

  • 1 can (400 g) chopped tomatoes

  • 2 cloves garlic

  • 1 onion

  • 200 ml cooking cream

  • salt, pepper, dried basil to taste

  • butter

  • fresh Parmesan, grated

Instructions

  1. Bring a large pot of water to a boil. Salt it generously and cook the pasta according to package instructions.

  2. Meanwhile, melt a little butter in a pan. Sauté the chopped onion until translucent. Add the minced garlic and cook briefly until fragrant – don’t let it burn.

  3. Pour in the canned tomatoes, stir, and simmer for about 5 minutes until slightly thickened.

  4. Stir in the cream, season with salt, pepper, and dried basil. Let it cook for another minute so the flavors meld together.

  5. Drain the pasta and transfer it to the pan with the sauce. If the sauce is too thick, add a splash of the reserved pasta cooking water. Mix well to coat.

  6. Serve immediately, topped with plenty of freshly grated Parmesan.

For an extra twist, toss in a handful of fresh spinach or some crispy pancetta before serving.
