There’s something magical about the smell of freshly fried donuts — warm, sweet, and impossible to resist. This version takes the classic treat to the next level: soft, golden donuts filled with whipped cream, vanilla custard, and juicy strawberries. A little bite of bakery heaven right from your kitchen.

Preparation

Make the base
In a large bowl, whisk the eggs with caster sugar and vanilla sugar for about 2 minutes, until pale and slightly foamy. -
Add liquids and yeast
Slowly pour in lukewarm milk while mixing, then add dry yeast and melted butter. Mix again. -
Add dry ingredients
Add flour and salt, then knead until a soft, elastic dough forms — about 10–12 minutes of kneading. -
First rise
Cover the bowl and let the dough rest in a warm place for about 1 hour, or until doubled in size. -
Shape
Transfer the dough to a lightly floured surface and divide it into 15 equal pieces (around 57 g each). Shape each into a ball. -
Flatten and fold
Roll each ball into a 13 cm circle, then fold it in half. Place the folded dough pieces on parchment paper. -
Second rise
Cover and let rise again for 30 minutes, until puffed and light. -
Fry
Heat about 2 cm of sunflower oil in a frying pan to 175°C (medium-high heat). Fry the donuts on both sides for 2–3 minutes, until golden brown.
Tip: drop a small piece of dough into the oil — if it browns in 1 minute, the temperature is perfect. -
Assemble
Drain donuts on paper towels. Once slightly cooled, open each donut and spread a bit of chocolate paste (optional), then pipe whipped cream, add strawberries, and a swirl of custard.
