🥪 Mini Salmon Sandwiches with Cream Cheese
Ingredients (serves 2)
- 4 whole grain rolls
- 100 g smoked salmon
- 80 g cream cheese
- 1 handful fresh arugula
- lemon juice
- olive oil
- black pepper to taste
Instructions
- Slice the rolls in half and lightly toast them until crisp.
- Spread cream cheese on the bottom halves.
- Add smoked salmon, arugula, and drizzle with lemon juice and olive oil.
- Cover with the top halves, pack to-go or serve as mini sandwiches.
Tip: For extra flavor, add some capers or a slice of avocado.
🍎 Yogurt Cup with Fruit and Granola
Ingredients (serves 2)
- 300 g Greek yogurt
- 1 tbsp honey
- 2 small apples (or other seasonal fruit)
- 50 g granola or crunchy cereal
- cinnamon to taste
Instructions
- Spoon the Greek yogurt into glasses and lightly sweeten with honey.
- Dice the apples, sprinkle with cinnamon, and layer on top of the yogurt.
- Add granola for crunch.
- Cover with a lid to keep the granola crisp until serving.
Tip: Prepare several portions in advance in jars with lids – perfect to take to work.
☕ Banana Cocoa Smoothie
Ingredients (serves 2)
- 2 ripe bananas
- 250 ml milk (or plant-based alternative)
- 1 tbsp cocoa powder
- 1 tbsp honey or maple syrup
- a few ice cubes
Instructions
- Blend bananas, milk, cocoa, and honey until smooth.
- Add ice cubes and blend again to a creamy texture.
- Pour into glasses and serve immediately.
Tip: Add 1/2 cup of cooled coffee for a delicious energy boost at 11 a.m.
