Mini Break, Maxi Flavor – Elevenses Recipes to Brighten Your Day

Quick and tasty elevenses ideas: smoked salmon mini sandwiches, a fresh yogurt fruit cup, and a creamy banana cocoa smoothie.

Sometimes, 11 a.m. is that little magical pause when we just need a snack, a sip, and a moment away from the daily rush. That’s why I’ve prepared three Elevenses ideas – quick to make, light, and of course, full of flavor.


🥪 Mini Salmon Sandwiches with Cream Cheese

Ingredients (serves 2)

  • 4 whole grain rolls
  • 100 g smoked salmon
  • 80 g cream cheese
  • 1 handful fresh arugula
  • lemon juice
  • olive oil
  • black pepper to taste

Instructions

  1. Slice the rolls in half and lightly toast them until crisp.
  2. Spread cream cheese on the bottom halves.
  3. Add smoked salmon, arugula, and drizzle with lemon juice and olive oil.
  4. Cover with the top halves, pack to-go or serve as mini sandwiches.

Tip: For extra flavor, add some capers or a slice of avocado.

🍎 Yogurt Cup with Fruit and Granola

Ingredients (serves 2)

  • 300 g Greek yogurt
  • 1 tbsp honey
  • 2 small apples (or other seasonal fruit)
  • 50 g granola or crunchy cereal
  • cinnamon to taste

Instructions

  1. Spoon the Greek yogurt into glasses and lightly sweeten with honey.
  2. Dice the apples, sprinkle with cinnamon, and layer on top of the yogurt.

  • 1 tbsp cocoa powder
  • 1 tbsp honey or maple syrup
  • a few ice cubes

Instructions

  1. Blend bananas, milk, cocoa, and honey until smooth.
  2. Add ice cubes and blend again to a creamy texture.
  3. Pour into glasses and serve immediately.

Tip: Add 1/2 cup of cooled coffee for a delicious energy boost at 11 a.m.
